We have had confirmed omnivores ask us for this recipe! Not a speck of meat to be found in this "chili-non-carne". This is fast becoming a tradition at our local Field Day (a nationwide Amateur Radio emergency preparedness exercise that gives us a good excuse to get together with 50 of our closest radio friends and spend 24 hours shouting into microphones while eating good food and getting bitten by mosquitoes...) A few years ago we served this chili at about 2am, when everyone was cold, tired, and needed a kick to get going again. Folks lined up for more! Vegan Chili ----------- 1 large onion 4 jalapeno peppers 3 or 4 other hot peppers 4 to 8 cloves garlic 1 can (28 oz) tomato puree 1 can (28 oz) peeled tomatoes 1 can (15 or 16 oz) kidney beans 1 can (15 or 16 oz) small red beans 1 can (15 or 16 oz) small white beans 2 red bell peppers 2 green bell peppers 1 Tbsp cumin 2 tsp ground dried chipotle pepper 2 tsp ground dried ancho pepper 1/4 tsp ground red hot chili pepper 1 Tbsp dried parsley 1 tsp dried oregano 1 C TVP (Textured Vegetable Protein) Chop onions. Seed and remove membranes from jalapenos and other hot peppers, and chop. Put onions, garlic and the chopped peppers into a large soup pot (at least 5 quart). Simmer until soft. Add a small amount of water, if needed, to keep it all from sticking. Add the canned tomatoes and the juice from the peeled tomatoes. Break up the peeled tomatoes with a knife and add them as well. Drain and rinse the beans, add them to the pot. Chop the bell peppers and add. Add the remaining ingredients except for the TVP to the pot. Taste and adjust the seasoning as desired. Add the TVP and allow the chili to simmer for an hour or so. Again taste and adjust the spicing as desired. Serving suggestions: - Serve over rice. - Garnish with chopped raw onion (red onion is good for this). This chili does have a little bit of a kick to it. For those of you who prefer a chili that doesn't kick, you might want to leave out the ground red-hot chili pepper. If that still doesn't do the trick, back off on the chipotle. If that still doesn't do the trick, leave out the random other hots, add a bit more tomato and serve it all over rice. If that _still_ doesn't do the trick, you need to stop eating such bland food... :) If, on the other hand, this isn't spicy enough, feel free to bump up the spice amounts, add a bit of cayenne, or even throw in a habanero or two -- go wild!
