This is an adaptation of the original Fannie Farmer oatmeal cookies. When we tried to make them fatfree, they didn't taste quite right. The addition of nutmeg was exactly what was needed! ------------ Oatmeal Cookies 1 1/2 cups flour 1/2 tsp. baking soda 1 1/2 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. nutmeg 1 1/2 tsp. EnerG Egg Replacer in 2 Tbsp water (or other replacement for 1 egg) 1 cup sugar 1 cup applesauce 1 Tbsp. molasses 1/4 cup nonfat soy milk (SoyMoo) 1 3/4 cups uncooked rolled oats 1 1/2 cups raisins Preheat oven to 350F (180C). Mix flour, baking soda, cinnamon, nutmeg and salt together. Then mix in remaining ingredients. On a non-stick cookie sheet, arrange teaspoonfuls of batter. Cook 12 to 14 minutes or until the edges are brown.
