This recipe is from The New McDougall Cookbook. We've made this a couple of years now, and it's every bit as good as when we first made it. I like to make interesting designs with the sliced apples on top, just to make it look nice... ----------- Apple Cake 2 1/2 cups whole-wheat pastry flour [I tend to just use regular white flour] 3 tsp. ground cinnamon 2 1/2 tsp. baking powder 1 1/2 tsp. baking soda 1 cup unsweetened applesauce [I use home-made] 1/2 cup honey 4 tsp. Ener-G Egg Replacer, well beaten with 8 Tbsp. water [replaces 2 eggs] 2 cups grated peeled apples 2 cups mashed bananas 1 cup raisins [we leave these out] 1 apple, sliced (optional) Preheat oven to 350F. In a large bowl, mix the flour, cinnamon, baking powder and baking soda. In a separate bowl, mix the applesauce, honey and Egg Replacer mixture. Add the wet mixture to the dry, and stir to mix. Add the remaining ingredients, except the sliced apple, and stir until well-mixed. Turn into a non-stick 13x9 inch pan and flatten slightly with a spatula. Top with the sliced apple and sprinkle with some additional cinnamon, if desired. Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
